Time to decide on a wheelset. I'm trying to keep things under $300 for a pair. I've been looking at the Mavic 717's laced to XT hubs, but am not so sure on the Shimano crap. I ride western PA singletrack and race, so weight and strength are also considerations.
Anyone have any suggestions? I'll be reading the comments.

I would agree stay away from the XT hubs. Chris King, or Mavic is the way to go.

You are hitting a REAL low price point if you want the whole wheelset under $300. I'm not sure what hubs you can get for that price that are really any better then the XT's. I've run XTR's in the past and they have been fine, but I've no time on the XTs.
The FSAs might be worth a look or the new DT full wheelsets too.
